The heating system based on indirect heat exchange through a coil powered by thermal oil (up to 180 kW) is the most desirable solution in the industry. Unlike electric heaters, thermal oil guarantees a very stable and uniform temperature along the entire length of the frying tank. This protects the edible oil from localized overheating and excessive degradation (oxidation). The mechanical system for lifting the top cover (hood) provides immediate and safe access to the working area, allowing the crew to quickly inspect and effectively perform foam cleaning.
